About the Recipe
Loaded sweet potatoes can be the main course or if you're preparing a holiday meal, this delicious side dish pairs well with many main dishes

Ingredients
2 Medium sweet potatoes
1 can black beans, drained and rinsed
1 bunch of kale, chopped
1 clove garlic, minsed
1 Tablespoon olive oil
salt and pepper
1/3 cup of water
Green goddess dressing - Plant Based
Preparation
Step 1
Bake the sweet potatoes
Step 2
Heat olive oil in pan over medium heat for a couple of minutes
Step 3
Add garlic and cook 2 minutes
Step 4
Add Kale; toss to coat; add water, cover and cook for 5 minutes
Step 5
Uncover, stir and cook 15 minutes - add water as needed
Step 6
Add beans, salt and pepper and warm.
Step 7
Cut the potatoes open and top with the mixture and dressing
