About the Recipe
A great addition to your breakfast menu. It brings the taste of eggs to compliment the veggies.

Ingredients
Fresh vegetables of choice, chopped or sliced (broccoli, brussel sprouts, bell pepper, carrots, green onions, garlic, summer squash, zucchini, mushrooms are some I use)
16 oz xtra firm tofu
fresh baby spinach or fresh kale, chopped fine
½ tsp kala namak (Indian black salt)
1 tsp garlic powder
2 Tbsp nutritional yeast
2 Tbsp chicken seasoning (I use McKay's)
Preparation
Step 1
Saute prepared vegetables in a tablespoon of sesame oil in a non-stick skillet about 5 minutes
Step 2
Drain liquid from the tofu and add the tofu to the vegtables by breaking into small pieces.
Step 3
Add seasonings, stir well and stir seasonings into the mixture and cook another 5 minutes
Step 4
Stir spinach and kale in and cook until they are wilted
Step 5
Service immediately.
